We are pleased to announce the launch of our first cooking class in Brighton UK.

In partnership with The Community Kitchen we present the following cooking and dining experience.

A 5 hour experience which includes a 3 hour cookery class, where attendees work together to prepare a three-course Italian Sunday lunch for the group. Upon arrival at Cookery School, attendees are welcomed with a glass of fizz and some nibbles. After cooking, the whole group sits down at linen-clad tables in a restaurant-style setting to enjoy the meal they have prepared themselves, served by Cookery School staff.  

Half day Cooking course menu:

First Dish: Home made fresh Pugliese pasta (traditional Orecchiette) with tomato, pecorino cheese and garlic. 

Side Dish: Layered eggplant parmesan with mozzarella, prosciutto and tomato.

Second Dish: Braciole rolled veal with fresh tomato sauce and cheese.

Dessert: Tiramis├╣

First we will prepare the tiramisu, layering coffee soaked biscuits and mascarpone cheese and decorating with flaked chocolate. Then we continue with the preparation of the tomato sauce, slow cooked to enhance and sweeten the flavour. Next we will prepare the Braciole which takes about two hours to cook using the method our grandmothers taught us. Learning to make traditional handmade pasta, orecchiette, is one of the highlights of the day; its unique shape (like little ears) and the combining of Apulian wheat flour and semolina, produces little domes of heaven. Our pasta preparation will be enhanced with olives, focaccia, taralli and a glass of prosecco!

We will then make another speciality, delicious eggplant parmesan (parmigiana di melanzane) using the sweet tomato sauce that has been cooking for about an hour, and delicious local ingredients.
